You know who is addicted to guacamole?
This girl.
Like I could literally put it on everything. (Tip: It’s really good in quesadillas because it melts a little bit… AH SO GOOD)
Guacamole is from HEAVEN.
Because guacamole is like my drug addiction, I try to buy those 100 calorie packs; however, single serving packs don’t work too well when you eat 3 of them at once…
So here’s my skinny girl take on my favorite snack!
It has roasted corn in it which adds some great texture and southwestern flare while I made the easy swap of high fat sour cream for high-protein plain greek yogurt.
It goes great with multi-grain tortilla chips but if you are gluten-free, you might love these wild rice chips! They are SO good and I lived off of them when I was gluten-free.

Skinny Guacamole
2 avacados, peeled and chopped
2 tablespoons medium salsa
2 tablespoons fat free greek yogurt
1 teaspoon lime juice
1/2 tsp garlic powder
1/4 cup frozen corn
1/4 tsp dried cilantro
salt and pepper to taste
1. Saute corn over medium heat
2. Pulse all ingredients together in a food processor until desired texture is reached
