Let me be honest real quick.
Refried beans aren’t exactly the prettiest food to photograph…
BUT THEY ARE SO GOOD.
In case you haven’t noticed, I love Mexican food. I love food with a kick and Mexican food normally brings it. Plus it features lots of beans which I have realized I have a strange obsession with.
Black beans are definitely my favorite kind of beans and they are chock full of protein, fiber, and antioxidants.
I love refried beans in enchiladas, on the side with tacos, etc. but the stuff out of the can doesn’t look very appetizing at first and also often contains a lot of sodium and lard.
Gross.
So I made up refried black beans not too long ago and they were muy delicioso! Try them out as a side next time you have Mexican night along with my Mexican street corn!

Refried Black Beans
serves 4
1 can of black beans, drained and rinsed
1/2 cup water
1/4 tsp ground cumin
dash of cayenne pepper
black pepper
3 cloves of roasted garlic, mashed
2 tablespoons chopped onion
1. In a sauce pan, add in all the ingredients, cover and heat to medium-low heat. Cook for 5-8 minutes and then mash with a potato masher.
