Corn and Pepper Relish

I don’t know why but this recipe reminds me of a backyard barbeque.

I feel like it would be perfect to top off chicken, fish, or basically anything! And it’s super easy to make too.

I made this just for myself one night because the rest of my family was eating steak but I could see my mom eyeing my meal with envy.

Plus mine was healthier so HAHA.

But really…

Carmelized onions + peppers + roasted corn = deliciousness.

Enough said.

Corn and Pepper Relish

serves 4

1 cup frozen corn

1 onion chopped

1 red bell pepper, chopped, ribs and seeds removed

1 tsp cilantro

sea salt and pepper

1 tablespoon olive oil

1. In a saucepan heat the olive oil over medium-low heat and add in the chopped onion and pepper. Cover and cook for 20 minutes.

2. After 20 minutes, add in the frozen corn and cook until the corn gets some browned bits. Remove from heat and add in remaining ingredients. Serve over grilled chicken or fish.
