To be honest, I would not really classify this as gourmet; however, this is a great updated version of white pizza that I have had in the past which has an olive oil base. This delicious version has a white sauce base and has some added toppings that set it over the top!
Oh and P.S.: This pizza is gluten-free! Of course, you can just as easily make it not gluten-free…
I used gluten-free Bisquick to make the crust according to their instuctions. I cut their recipe in half though because it was just for my mom and I.
This could also easily become a meatless meal if you omit the turkey bacon or just replace it with the meatless bacon…
I have never tried meatless bacon. Does anyone know if it is any good? It sounds deceptive to me… It looks like bacon. It smells like bacon. But it’s made of vegetables. :/

Gourmet White Pizza
serves 2
gluten-free Bisquick pizza crust recipe (cut it in half)
1 tablespoon unsalted butter
1 tablespoon gluten-free all purpose flour
1/2 cup skim milk
salt and pepper to taste
1/2 cup baby spinach
1/2 cup italian cheese blend
1/2 onion, chopped
1/2 medium tomato, diced
1 piece turkey bacon, chopped
1 teaspoon italian seasoning
1. Prepare crust according to instructions and spread pretty thin onto a greased pizza stone. Bake at 425 degrees for 15 minutes.
2. Meanwhile, melt the butter in a saucepan over medium heat. Add the flour and stir until it starts to bubble. Add the milk and contiue stirring constantly until the sauce thickens and bubbles. Season with salt and pepper to taste.
3. Take the crust out of the oven and spread the white sauce onto it. Top with baby spinach and then the italian cheese. Top with remaining ingredients.
4. Return to oven at 425 degrees and bake for 10-15 minutes or until cheese is slightly browned.
5. Slice and enjoy!
