One of my favorite casual restaurants in Charlotte, NC is called Boneheads. My roommate used to work there and so I would go there with her on occasion and I would always get the same thing: Grilled Tilapia with pineapple salsa and a side of sweet potato fries. Boneheads is a really good place if you are looking for a quick-ish lunch that is light but DELICIOUS.
This is my take on my favorite meal at Boneheads, I used less onion than they do in their salsa, mostly because I love pineapple and wanted to keep things simple in the salsa.
This is a light and fresh meal that I hope you will enjoy just as much as I did. Comment and let me know what you think if you try it out!
Grilled Tilapia with Pineapple Salsa
serves 4
4 tipalia filets
2 tsp paprika
1 tsp garlic salt
1/2 tsp garlic powder
1/4 tsp fresh cracked pepper
Pineapple Salsa:
1/4 of a fresh pinapple, chopped
1/2 tsp minced jalepeno
1 tablespoon lime juice
fresh cracked pepper
1 tablespoon red onion
1/4 tsp honey
1. Mix all ingredients for the salsa together and refrigerate for at least 2 hours.
2. In a small bowl, mix together all of the seasonings for the fish and sprinkle each filet with the seasoning mix on both sides.
3. Spray a large skillet and heat over medium heat. Then add tilapia filets and cook about 3 minutes on each side or until browned on each side.
4. Top the filets with the pinapple salsa. Enjoy!
