Brie is the best cheese in the world.
It is creamy and gooey and just straight up good.
Sometimes my family will just have Brie night for dinner and we will just have apples, crackers, and a wheel of Brie to share for dinner.
Not real healthy but… It’s REAL GOOD.
When I’m home from college, I love making things like paninis, single-serving Mac and cheese, and other fun things because I can’t do too much with just a microwave and a Keurig in my dorm room. I just recently made a bunch of these paninis for my family for lunch and they were a HIT.
I love me some grilled sandwiches, and this one is just perfect.
Oh and the pesto-mayo is the bomb-diggity.

Chicken Brie Panini
Makes 4
1 large grilled chicken breast, chopped
2 tablespoons light mayo
2 tablespoons basil pesto (homemade or store-bought)
4 oz of Brie, sliced thin
8 slices bread
1. Spray a panini press with cooking spray and heat to medium heat.
2. In a small bowl, mix together the pesto and mayo and spread on one side of 4 of the slices of bread
3. Put some of the chicken on each of the pesto-mayo topped bread slices and then layer on the brie.
4. Top off the sandwich with the 2nd slice of bread and then place in the panini press and grill until the bread is toasted golden brown.
